Our previous story:

MASON CITY | Teams began presenting dishes for evaluation at the Up in Smoke BBQ Bash on Saturday afternoon.

Judges certified by the Kansas City Barbeque Society will judge teams in chicken, pork, brisket and ribs. There also is a competition for deserts and "Anything But" barbecue.

Teams were putting the finishing touches on their barbecue dishes before carrying them up to the judging tent on Saturday.

Details matter: The dishes are judged on presentation, as well as taste and tenderness.

Judging is blind -- Judges do not know whose food they are tasting.

Teams bring food to the front of the judging tent, but volunteers carry it into the tent for evaluation.

Dishes are delivered to the judges in white foam containers marked only with a number.

The awards ceremony will be held at 4 p.m.

Points earned at the Up in Smoke BBQ Bash will count towards the Kansas City Barbeque Society's year-end contest for barbecue team of the year.
